Woad is a member of the brassica family and happily grows throughout winter. Grows as a rosette, harvest the leaves as you would a cut-and-come-again lettuce, from the oldest leaves, discarding any that have browned.

Also great as a trap-crop, surround your brassicas with woad & offer the white butterflies alternative plants on which to lay eggs, ultimately toxic to the critters.
To create natural colour, look into ice-dying with fresh leaves or get messy & produce woad balls.
